Tomato, Cilantro, Yogurt Chicken Curry

Quick question... do you like flavour?... like ...lots and lots of flavour? I sure hope you do because this chicken curry has a TON of it! It's a melody of cilantro, tomato, garlic, ginger, lemon, chilli and several aromatic spices which creates a perfect flavour of spicyness, tangyness, and sweetness! My mouth is watering just writing this up for you guys!

Ingredients:

8 Chicken Thighs, cleaned of fat, washed and drained of water

2 Tomato, diced

1 Red onion, sliced

1 bunch of fresh cilantro, stems removed

6 garlic cloves

1 inch ginger

3 green chilli

1/8 cup lemon juice

1 tsp black pepper

2 tbsp of brown sugar

1 tsp turmeric

1 tsp coriander powder

1 tsp cumin seeds

1 tsp garam masala

1/5 tsp chilli powder

3 heaping tbsp yogurt

1 tbsp salt

2 cups water

Method:

1) Get the cilantro sauce ready – blend together cilantro, garlic, ginger, green chilli, ½ tsp of cumin, and lemon juice.

2) Cook up the chicken - Heat oil in sauce pan on medium to high, add the black pepper and cumin seeds, stir and add the onions until golden. Add the chicken to the pan with the brown sugar. Toss to coat, and let it cook for about 7 minutes or until the chicken is lightly browned.

3) Make the gravy – add the tomato and spices to the chicken. Once you see the tomato dissolving and the spices just starting to burn and stick, about 3 minutes, add the blended content. Stir it up and let it simmer for 5 minutes. In the blender, add the yogurt and stir it together with 2 cup of water. Simmer the curry for about 20 mins or until it has reduce to your desired amount of gravy. Taste and adjust to your liking, to the right about of salt, tang, and sweetness.

4) Serve it up with fresh rice or naan! OM NOM NOM!! It IS SOOOOO good!
