Baked potato is such an easy and versatile dish. You can have it as a simple side topped with butter, salt, and pepper ... or you can do what I to do and stuff it with sautéed ground chicken! Use anything really, make it meaty or vegetarian. And if its twice baked, its twice as good of a meal just on its own! Easy to bring together, healthy & hearty too.
Ingredients:
3 Sweet Potato
2 tbsp butter
2 tblsp cream cheese
1/3 cup milk
0.5 lbs ground chicken
Half an onion
4 cloves of garlic, chopped or 1 tbsp of garlic paste
1 jalapeno, finely chopped
2 tsp paprika
2 tsp cumin
olive oil
salt & pepper to taste
Method:
1) Bake the sweet potato – Set you oven to 350 F. After you wash and clean your sweet potato, set it on a baking pan, drizzle it all over with olive oil, and bake it until its soft to the core. Take out and let cool.
2) Make the stuffing – While the sweet potato bakes, get your stuffing ready. In a skillet, heat oil and add you onion and garlic. When the onion is translucent, add in your ground chicken with salt, pepper, paprika, and cumin. When the meat is grounded, add in the jalapeno. Cook, stir, and combine for 2 mins and you are done.
3) Twice bake ready – Once the sweet potato is cool enough for you to handle, cut down the center lengthwise. Scoop out the sweet potato out of its flesh into a bowl. Trying to not tear the flesh, remember, we are stuffing them back. To the sweet potato, add the milk, butter, cream cheese, salt, and pepper to taste ... give it a good whip. Scoop this newly whipped sweet potato mixture back into its flesh. Top it off with the ground chicken stuffing and bake for about 20 mins at 300 F.
4) Take out of the oven, plate, and then its OM NOM NOM time!
